An increasing number of English sparklers are doing a brilliant job of aping Champagne by using the same soils – cretaceous chalk, the same method of production, and the same grapes – Chardonnay and Pinot Noir. This delightful fizz from Chapel Down in Kent uses just 15% Pinot Noir to add a little colour and the scent of strawberries. The bulk of the grapes are old English stalwart whites – Reichensteiner and Müller-Thurgau – and these give a bright appley fruit and a haughty stony leanness that isn’t like Champagne, but is proudly, Kentishly English.
